Winter Risotto Pudding...

A new slant on an old family favourite. If you have any maple syrup to hand try drizzling a little on the cooked apple before topping with rice.
Ingredients
- 700g/1½lb cooking apples
- Knob of butter
- 150g/5oz granulated sugar
- 350g/12oz risotto rice
- Pinch ground cinnamon
- 125g/4oz clotted cream or mascarpone
- 1 litre Copella Winter Warmer
Method
Peel, core and roughly chop the apples. Put in a large saucepan with 50g/2oz of sugar, the cinnamon and 4 tablespoons of the Copella Winter Warmer. Cover and simmer gently until soft but still chunky then spoon into an ovenproof dish and leave to cool. Rinse out the saucepan and melt the butter in it. Add the rice and stir over a moderate heat for 2-3 minutes. Pour the remaining juice into the rice and bring to the boil.
Simmer, stirring occasionally, until most of the liquid has been absorbed and the rice is very tender, this should take about 20 minutes. Sweeten the rice to your taste with a little of the remaining sugar then leave to cool for 10 minutes. Stir the cream into the rice and spoon over the apples and sprinkle the top with all the remaining sugar. Put the dish under a hot grill until the sugar has caramelised to a dark golden colour.
