Curried Apple and Parsnip Soup

A toe warming soup perfect on its own with a crusty wholemeal roll or as part of a delicious meal.

Ingredients

  • 2tbsp Butter
  • 1 Onion
  • 1 Garlic clove
  • 500g Parsnips
  • 1tsp Curry powder
  • 300ml Apple juice
  • 600ml Vegetable stock
  • 300ml Milk
  • Salt & Pepper
  • Creme fraiche
  • Chopped mint or parsley

Method

Fry parsnips, onion &garlic; in butter for ten minutes. Add curry powder, apple juice and stock. Bring to the boil and then simmer for 20 minutes. Blend mixture, season and add salt and pepper. Reheat gently then serve topped with creme fraiche and herbs.
