Fruit Muesli Layer

Great for breakfast or as a daytime snack, this dish combines all of your favourite summer fruits with Quaker Oats and Copella Apple Juice. Every mouthful is a taste sensation.

Ingredients

  • 170g Quaker Oats
  • 170g sultanas
  • 110g ready soaked apricots, diced
  • 110g roasted hazelnuts, halved
  • 350mls Copella Apple Juice
  • 150g each of fresh blueberries, raspberries and strawberries washed and stalks removed
  • Greek Yoghurt and runny honey to serve

Method

In a large bowl mix together the oats, sultanas, apricots and hazelnuts. Pour over the apple juice and leave for 10 -15 minutes to allow the oats and dried fruit to soak up the juice.

Divide half the soft fruit between 6 glasses. Top with spoonfuls of the prepared muesli followed by the remaining fruit. Just before serving, top with a layer of Greek yoghurt and a spoonful of honey.
