  • Juice from ¼ lemon
  • 1 Teaspoon of Sugar
  • 4 Sprigs of fresh Rosemary
  • A Pinch of Cinnamon

jug (1 litre)

  • 450mls Copella English Apple
  • Juice from ¾ lemon
  • 3 Teaspoons of Sugar
  • 12 Sprigs of fresh Rosemary
  • 3 Pinches of Cinnamon

Method

Grind up 3 (or 9 if making a jug) of the rosemary sprigs, lemon juice and sugar in the bottom of a cocktail shaker until it forms a paste.

Add the Copella and the Cinnamon.

Fill your shaker with cubed shaped ice and put the lid in place to seal. Shake it hard in a vertical motion from shoulder to waste and for 10-15 seconds.

Now remove the lid and strain out the ice and pulp, pour the rest of the precious liquid into a tall glass over fresh cubed ice.

Now add the finishing touch – remaining rosemary, a lemon slice and a small pinch of cinnamon
